It’s gluten free, dairy free and most of all VEGAN! This recipe can be done in small or large batches. It’s a great treat for that dietary requirement dessert on your buffets; breakfast or a late evening treat.
Ingredients:
- 1 small ripe papaya
- 1 package (300g) silken tofu, drained
- 3tbsp maple syrup (adjust according to taste preference)
- 120g dark chocolate
- 1 teaspoon vanilla extract
- Optional toppings: fresh mint leaves, toasted coconut flakes, or chopped pistachios
Preparation:
- Prep Papaya: Ensure your papaya is ripe, as it adds natural sweetness and aroma to the mousse. Peel, seed, and dice the papaya into small chunks. TIP: when sourcing your papayas pick the ones with small sugar spot on the skin. These sugar spots are a good indicator that the papaya is ripe but also nice and sweet.
- Drain Tofu: Silken tofu works best for this recipe due to its smooth texture. Drain any excess water from the tofu.
- Blend Smooth: In a blender or food processor, blend the papaya to a puree; remove from blender. Add 50g of the papaya puree back to the blender with the tofu, maple syrup, melted dark chocolate and vanilla extract. Blend until smooth and creamy, ensuring there are no lumps.
- Taste and Adjust: Give your mousse a quick taste test. Adjust the sweetness or tanginess by adding more maple syrup if needed.
- Layer and Chill: Transfer the blended mixture. Layer the tofu mousse with the papaya puree into serving glasses or bowls. Cover and refrigerate for at least 1 hour, allowing the mousse to set and flavours to meld together.
